CREAMED CORN CASSEROLE

WEEK NINE: RECIPES FOR DAYS WHEN YOU NEED SOMETHING QUICK AND EASY THAT FILLS EMPTY STOMACHS BUT STILL LOOKS GOOD ON THE TABLE AND HAS THEM COMING BACK FOR MORE.

Okay, I know this is a no-brainer recipe idea and it's probably not on the low-carb healthy diet 'casserole of the month' list, but I'll tell you this about it--it's good and it's easy and everyone likes it and you can put it together in 5 minutes or even less than that if you use canned potatoes or baked potatoes you have left over in the fridge. It's one of those dishes that you can put together at the last minute, combine it with a green salad and some good bread of some sort and it makes you look like you're Martha Stewart or Rachael Ray. Who would have thought something so simple would be so good? Here is how you put it together:

2 cans creamed corn
3 medium-size potatoes, cooked
5 hot dogs, cut up in chunks
cheddar cheese for garnish

That's it? Yes, that's all there is to it.


1. Cook the potatoes first. If you use red potatoes, as I did, you don't need to peel them.


2. Put the creamed corn into a casserole dish and add the cooked potatoes.

3. Add the cut up hot dogs and mix together.

5. Bake in a 350 degree oven for 30 minutes or long enough to make it bubbling and hot.

6. Sprinkle with cheese. Enjoy!
