GOOD MORNING BREAKFAST BREAD


RECIPES THAT WILL MAKE YOU GLAD THAT YOU HAVE A STOVE TO COOK ON AND PANS TO COOK WITH.


Sometimes you just want to make something in the morning that is easy, good and that makes everyone happy and feel loved. This is a recipe that I adapted from a cookbook I bought in Jackson Hole, Wyoming called "Wilde West Cookbook of Jackson Hole". The first time I made it, I served it to some friends and they could NOT stop eating it. It was still warm and it's just a little crunchy and it really is terrifically good. You can throw it together in less than 15 minutes and it takes about 30 minutes to bake. It's one of those breakfast offerings that my mother used to call a "Coffee Cake". That's because back in the 1950's, women in neighborhoods used to get together once a week for what they called a "Coffee Clatch" (don't ask me what that means) where they would all sit around munching on something delicious and drink coffee. Women don't do that anymore, at least not the women I know. Most of them are either working or too busy with their homes and families to spend much time visiting and munching on delicious things. It's too bad in a way because it was a good way to get to know your neighbors and feel like you were a part of a community. Oh, well. Those were different days and a much different time. But, and here is the good part, you can still make delicious things and invite people over or take them over to people for them to enjoy or just make them for yourself or your family to enjoy.

Here is the recipe:

1 1/2 C. sugar
2/3 C. oil
2 eggs
1 C. milk
3 C. flour
4 tsp. Baking Powder
1 tsp. salt

Mix all and spread mixture into a prepared 9 X 13 pan.

Topping:

1/2 cube butter
1 tsp. vanilla
2 tsp. cinnamon
1 C. brown sugar
1/2 C. chopped pecans or walnuts (optional)

Put on top of bread mixture and slightly marble in. Bake at 375 degrees for 30 minutes.

1. I have made both the full recipe and also cut it in half, which you can do if you only want to make it for a small number of people. When you half the recipe, use a 8" round cake pan.
Spray it with Pam Baking spray.


2. Mix the sugar, oil, eggs, milk, flour, baking powder and salt together in a bowl. You don't need to sift the flour, but use a good high-grade flour, one that is best for pastries and cakes.

3. Mix the topping together in a separate bowl. If you want, you can add 1/2 C. oatmeal in place of the nuts. It also gives it a nice nut-like flavor. Some people just DON'T like nuts and you can't get around it no matter how hard you try.


4. Spread the topping on the batter in the cake pan, then swirl it around until it is lightly mixed in. Try not to get it mixed in too much or it will be too heavy in the middle and won't raise the way it should. That's it. Just pop it in the oven and bake it while you're getting other things ready. The smell of it baking will bring everyone hurrying to the kitchen to see what wonderful, amazing thing you are making. It works like a magnet. When finished baking, turn it upside down on a plate and cut it into wedges if you have made half the recipe. If you've baked it in a 9" X 13" pan, just cut it out in squares and serve them piled up on a plate. It will disappear right before your eyes. Enjoy!
