SCRAMBLED EGG, BACON & TOMATO SANDWICH


WEEK SIXTEEN: RECIPES THAT BRING OUT THE HOMEBODY IN YOU AND MAKE YOU GLAD THAT YOU LOVE TO EAT.
There are few things in life that are better than having a good breakfast, especially when someone else fixes it for you. But since that doesn't often happen, at least not in my life, then it's good to know how to fix a good one for yourself and this little breakfast idea is one I can say is one of the best. It helps if you have a rectangular griddle to cook the eggs on, but not absolutely necessary. A half-moon egg sandwich tastes just as good as a square one. Bacon and tomatoes always go well together and this is no exception. Although you have to make these one at a time, if you fry enough bacon you can make 3 or 4 of them at once without too much trouble. Here is the problem: If you serve just one, everyone else is going to want to have one. Good thing that they are easy to make as well as good to eat. Here is how:
1. First, fry up some good bacon. I like my bacon crispy but not burned. Then drain the bacon on paper towels.

2. Scramble two eggs together in a bowl. Three is really too many for this kind of sandwich because it's hard to get them to cook well enough and flipping the whole thing over is easier when you use just two eggs.


3. Slice up some fresh tomatoes. Tomatoes are in season right now and are so delicious. You just can't beat a fresh-from-the-garden tomato. If you don't grow any, make friends with people who do.

4. Have some grated cheese on hand. You can use any kind you like, but I prefer Tillamook cheddar for this.

5. Pour the beaten eggs onto a prepared griddle. I use Pam to spray it with.
Let the eggs cook for about a minute or until they are almost set. They will still be a little runny on top, but that's okay.


6. Now flip the eggs over and cook about 15 seconds on the other side, just enough so they are cooked but not rubbery.

7. Now add about 1/2 C. of cheese on the whole thing, the tomatoes and 4 bacon slices.
Fold it over to make a sandwich and sprinkle a little more cheese on top. There you have it!
Serve with toast, fruit or whatever else you might want. Tomatoes for breakfast? You bet! They are so good with the bacon, cheese and eggs. It wouldn't be the same without them, that's for sure. This serves 1. Just keep making them so everyone else will be happy. Enjoy
