CREAMED CORN CHICKEN CHILI

RECIPES THAT WILL MAKE YOU GLAD THAT YOU HAVE A STOVE TO COOK ON AND PANS TO COOK WITH.

This is one of those recipes you can always fall back on when you need something good that you know you can trust because it always turns out the same and it's something almost everyone always likes. You have to be a little careful with the seasonings if you have someone who has a sensitive palate and can taste roasted cumin a mile away and objects strongly to it. Of course, you don't have to use the roasted kind but just regular cumin so it won't have quite the bite. However, in my opinion, the 'bite' is what makes it so good. Also, it's a recipe you can improvise with if that's what you like to do. If you prefer pork to chicken, you can use that. If you don't like creamed corn, you can add Great Northern white beans, instead. But I like it this way and I think you will, too.

2 large chicken breasts, cooked for 3-4 hours in a crock pot.
2 cups rice
4 cups water
1 package dry onion soup
2 cans creamed corn
2 chicken bouillon cubes
1 tsp. oregano
1 tsp. cumin (whichever kind you prefer)
1 cup sour cream
1/2 cup heavy whipping cream
1/4 cup green onion, chopped
4 Tbsp. green or red pepper, chopped


1. Cook the chicken breasts until they are white all the way through, no pink snowing. Take them out of the pot and pour off the broth. You can use that for something else or just toss it out. Take two forks and pull the chicken apart until it is well shredded.
2. While you are cooking the chicken, cook the rice in a separate pot, using the rice, the water and the dry onion soup which gives it a good flavor. You don't need to add salt to the rice because there is plenty of it in the soup package.

3. In a saucepan, put the creamed corn and the seasonings. Bring to a boil and cook until the seasonings are well-blended into the corn.

4. Add the chicken to the creamed corn mixture. Then add the sour cream, the cream and the chopped onion and green pepper.

5. Put it back into the crock pot and keep it warm until you are ready to serve it.
It goes well with a green salad, tortilla chips and a dip. Garnish it with some grated cheese or serve it plain, whichever you like best. Enjoy!
