MEXICAN BREAKFAST BURRITO, OLE!

RECIPES THAT MAKE YOU FEEL LIKE GOD IS IN HIS HEAVEN AND ALL IS RIGHT WITH THE WORLD.

Sometimes when you wake up in the morning you just have that 'south of the border' feeling and nothing will do but to whip up some Mexican burritos for breakfast. Doing something a little on the ethnic side always seems like it will be a lot harder or more work, but such is not the case with these burritos. In fact, they're a lot easier than making pancakes (unless you use a 'Just Add Water' mix) and they're really very healthy, to boot. I used whole wheat tortillas in this recipe, but if you have a strong aversion to whole wheat, you can use plain white tortillas and they work just as well. You'll be glad you decided to give these a try and so will your family or whoever is lucky enough to be on the serving end of your culinary efforts. Here is what you do:

1/2 lb. sausage
1/2 green pepper
1/2 small onion
1 tsp. Mexican seasoning
2 eggs scrambled
1 C. shredded cheese
4 tortillas
1/2 C. salsa

1. Brown the sausage in a medium size frying pan.
2. Add the onion and green pepper and cook, stirring constantly, until the sausage is browned and the pepper and onion are translucent.
3. Add the Mexican seasoning and continue stirring.
4. Scramble the eggs in a bowl and then add to the sausage and vegetables. Stir, cooking slowly, until the eggs are cooked completely.
5. Lay out the tortillas that have been warmed for 20 seconds in the Microwave oven.
6. Spoon the meat and egg mixture onto the tortillas. Add 1/2 C. cheese. Fold in on the sides and roll up from the bottom to the top.
7. Lay the burritos on a plate and cover with salsa and 1/2 C. shredded cheese.
8. Melt the cheese in a toaster oven until bubbling. Sprinkle with Mexican seasoning. Serve hot with a dollop of sour cream, if desired. Enjoy!
